Description

Para do Pé Tostado Tinto is a naturally sweet wine crafted from indigenous grape varieties of the Ribeiro region. The grapes are hand-selected and subjected to a drying process—*pasificación*—in naturally ventilated spaces for a minimum of three months, which concentrates their sugars and aromas.

Fermentation is slow and spontaneous, with no added alcohol, preserving the freshness and acidity characteristic of the area. The wine is aged in oak barrels for at least six months, followed by a three-month period of bottle maturation before its release to the market.

Visually, it displays hues ranging from dark gold to mahogany, with a dense, brilliant texture. On the nose, it is distinguished by aromas of dried fruits, nuts, honey, yellow flowers, and candied orange. On the palate, it is sweet, enveloping, and balanced, with a long, elegant finish.

An artisanal wine with limited production, deeply rooted in the winemaking history of the Ribeiro region.

Additional information

Grape Harvest

Start: 6/09/2014. The harvest was carried out by hand and concluded on September 26th. A total of 1,200 kg of red grapes were gathered from the vineyards in ventilated crates, with an average of 3 kg per crate.

Production process

Removal of stalks and crushing of raisins by hand. Pressing in a small, traditional manual screw press.

Fermentation

Naturally for 3.5 months

Maturation

In French oak barrels from September 1, 2015, to February 20, 2019.

Work on the farm

Traditionally, the work is done by hand, using pruning shears and a pole. Only natural products—consistent with permaculture and organic farming—are used, following the philosophical principles of Steiner. No pesticides, herbicides, or synthetic products are used in the vineyard.

Observations

The process of producing a *tostado* is highly laborious; it is a naturally sweet wine made from grapes dried indoors for over three months, using traditional grape varieties from the Ribeiro region. The entire process—from monitoring the drying stage to overseeing fermentation and maturation—spans several years and requires meticulous care. The goal is to create a distinct, unique, and complex wine, rooted in the traditional viticultural and winemaking principles of Ribeiro.
